A Golden, Creamy Classic
There’s something undeniably elegant about risotto – especially when it glows with the golden hue of saffron. Saffron Risotto, also known as Risotto alla Milanese in Italian tradition, is the perfect union of comfort and sophistication. Creamy, rich, and fragrant, it’s a dish that transforms simple ingredients into something extraordinary.
Whether served as a luxurious main course or as a side to grilled vegetables or proteins,
this saffron-infused risotto brings warmth, flavor, and a touch of indulgence to your table.
INGREDIENTS:
-
1 cup Arborio rice (or any short-grain rice)
-
¼ tsp saffron threads
-
2 tbsp butter
-
1 small onion, finely chopped
-
1 garlic clove, minced
-
3 cups warm vegetable or chicken broth
-
½ cup grated Parmesan cheese
-
Salt and black pepper to taste
-
Fresh parsley for garnish
METHOD OF PREPARATION
Step 1: Saffron Infusion
Begin by soaking the saffron threads in 1 tablespoon of warm broth or water. This step enhances the deep yellow color and delicate floral aroma.

Step 2: Sauté the Aromatics
In a wide pan, melt 1 tablespoon of butter over medium heat. Add the finely chopped onion and sauté until translucent – about 2–3 minutes. Stir in the minced garlic and cook for another minute.

Step 3: Toast the Rice
Add Arborio rice to the pan and stir gently for about 2 minutes. This helps to coat each grain with butter and lightly toast the rice, giving it that classic risotto texture. The rice should appear slightly translucent around the edges.

Step 4: Add Saffron and Broth Gradually
Pour in the saffron mixture and stir well to coat the rice. Then, add the warm broth one ladle at a time, stirring continuously. Wait for the liquid to be absorbed before adding the next ladle. This slow, steady process creates that creamy texture risotto is famous for.

Step 5: Finish with Cheese and Butter
After about 18–20 minutes, the rice should be tender but still have a slight bite (al dente). Stir in the remaining tablespoon of butter and Parmesan cheese. Mix until melted and creamy. Season with salt and black pepper to taste.

Step 6: Serve with Style
Serve hot, garnished with fresh parsley and a sprinkle of extra Parmesan. Enjoy it as a stand-alone dish or pair with grilled mushrooms, roasted vegetables, or lemon-herb chicken.

Notes
-
Rice choice: Arborio is ideal for risotto, but Carnaroli or Vialone Nano also work beautifully for a creamier finish.
-
Broth tip: Keep the broth warm throughout to maintain a steady cooking temperature.
-
No Parmesan? You can substitute with nutritional yeast for a vegetarian option or use aged cheddar for a deeper flavor.
-
Add-ins: Stir in peas, sautéed mushrooms, or roasted pumpkin cubes for variation.
